Grilled Mackerel

Serves 4

Preperation and Cooking Time 15 minutes + 1 hour for the marinade

  • 4 mackerel (or 8 to 12 sardines)
  • 1 glass of oil
  • juice of 1 lemon
  • flour
  • 1 onion
  • salt
  • pepper

1. Clean the fish and remove their backbones after having opened them up, while at the same time keeping the stomach intact.
2. Place the mackerel for at least an hour in a marinade made with oil, lemon and onion cut into round slices.
3. Season and lightly sprinkle with flour. Preheat the grill without oil for about 3-5 minutes. When hot, place the mackerel on the grill and cook for about 5 minutes on each side.
4. Serve the grilled fish in a Bordeaux or Provencal style sauce.
