Chicken Chasseur (Hunter's Chicken)

Le Creuset has teamed up with widely acclaimed celebrity chef Charmaine Cheung to celebrate this "French Gourmay". Charmaine shares a few recipes that can be easily re-created at home in under 1 hour.
Chicken Chasseur (Hunter's Chicken) is a classic French dish. It consists of fried chicken served with a flavorful sauce chasseur, which is based on mushrooms, onions or shallots, tomatoes, wine, and various herbs.
- Product used: Round Casserole 26cm Flame
- Cooking time: Under 1 hour
Ingredients
- 6 pieces chicken thighs, bone in
- 1 pack white button mushrooms
- 4 cloves shallot, finely chopped
- 3 tomatoes, finely chopped
- 25ml cognac
- 50ml white wine
- 1 cup chicken stock
- 75g unsalted butter
- 3-4 tablespoons unbleached plain flour
- Fresh parsley
- Fresh tarragon
- Sea salt
Instructions
- In a Casserole, sear the chicken till both sides are golden, about 4 to 6 mins per a side under medium low heat. Remove and set aside.
- Add butter to the same casserole.
- Once the butter starts to melt, add shallots.
- Sauté till golden and add a splash of cognac and tomatoes.
- Turn up the heat and sauté for a few minutes and add flour, mix well.
- Add white wine and chicken stocks, stir well till it starts to thicken and season with sea salt.
- Lastly add fresh tarragon and place chicken back into the casserole, cover and cook for a few mins.
- Remove cover and sprinkle fresh parsley and serve immediately.
