Crème de champignons (Cream of Mushrooms)

Le Creuset has teamed up with widely acclaimed celebrity chef Charmaine Cheung to celebrate this "French Gourmay". Charmaine shares a few recipes that can be easily re-created at home in under 1 hour.

Cream of Mushroom is a quick and simple staple dish which is hearty and comforting. With the earthy mushrooms and its rich and creamy texture, it will be cleared in no time once it is served.


  • Product used: Marmite 28cm Shallot
  • Cooking time: Under 1 hour

Ingredients 

  • 1 pack brown button mushrooms
  • 1 pack white button mushrooms 
  • 75g unsalted butter
  • 3 tablespoons unbleached plain flour
  • 150ml whole cream UHT milk
  • 1 tablespoon wholegrain mustard
  • Finely grained sea salt
  • 2 sprigs fresh thyme

Instructions

  1. First, coat your Marmite with oil before turning on the heat.
  2. Add 1/3 of the mixed mushrooms, sauté for 2 mins.
  3. Add another 1/3 mixed mushrooms, sauté for another minute.
  4. Then add the remaining mushrooms. this way we can ensure the heat is sufficient.
  5. Season with salt and add butter after mushrooms start to brown.
  6. Next, sprinkle flour, mix well.
  7. Add milk, wholegrain mustard and thyme. Stir well.
  8. Once it starts to thicken turn heat off and toast baguette.
