Tomato and Tofu Soup
This Tomato and Tofu Quick Soup is a light yet satisfying dish that combines the natural sweetness of fresh tomatoes with the smooth texture of tofu and the richness of beaten eggs. - Cooking Time: 1 hour
Ingredients
- 3 tomato, chopped
- 2 egg, beaten
- 200g tofu, cubed
- 2 stalk scallion
Seasonings:
- 1 teaspoon salt
- a pinch of pepper
- a dash of sesame oil
- 900ml stock
Instructions
- Add a little oil in a cold Cocotte Every casserole. Heat oil over medium heat and sauté the tomatoes until fragrant.
- Add water, bring to a boil, then add tofu, beaten eggs, and seasonings. Turn off the heat, add chopped green onions, and serve.
