Tomato and Tofu Soup

This Tomato and Tofu Quick Soup is a light yet satisfying dish that combines the natural sweetness of fresh tomatoes with the smooth texture of tofu and the richness of beaten eggs. Product used: Cocotte Every 20cm Shell Pink

  • Cooking Time: 1 hour

Ingredients 


  • 3 tomato, chopped
  • 2 egg, beaten
  • 200g tofu, cubed
  • 2 stalk scallion


Seasonings:

  • 1 teaspoon salt
  • a pinch of pepper
  • a dash of sesame oil
  • 900ml stock

Instructions

  1. Add a little oil in a cold Cocotte Every casserole. Heat oil over medium heat and sauté the tomatoes until fragrant.
  2. Add water, bring to a boil, then add tofu, beaten eggs, and seasonings. Turn off the heat, add chopped green onions, and serve.
