Korean Abalone Congee
This healthy Korean Abalone Congee is gently simmered with abalone and rice until smooth and velvety, offering a natural sweetness from the sea. Nourishing and comforting, it's a simple yet flavorful dish perfect for restoring energy and warming the body.

- Cooking Time: 1 hour 35 minutes
Ingredients
- 3 pieces canned abalone
- 5 cups seafood stock
- 1 cup rice
- 1 tablespoon sesame oil
- Sesame seeds, chopped spring onion, diced carrot, and dried anchovies to taste
Instructions
- Rinse the rice thoroughly and soak it in cold water for 1 hour, then drain well. Slice the abalone.
- Add oil in cold pot. Heat sesame oil in casserole over low heat for 5 minutes. Switch to medium heat, then add the sliced abalone and rice, stirring evenly with a spatula.
- Add half of the stock and keep stirring. When the rice is nearly cooked, pour in the remaining stock. Reduce to low heat, cover, and continue cooking for 30 minutes.
- When the congee becomes thick and creamy, season with a little salt. Top with sesame seeds, chopped spring onion, diced carrot, and dried anchovies, and serve with kimchi.
